If you drink your wine straight from the fridge, more often than not it will be far too cold. Wine that has seen oak will taste only of oak, as the fruit profile is subdued. To get more flavour out of your whites, take them out of the fridge about 30 mins before you drink them, and if it is the middle of winter, don't be afraid to let them warm up in the kitchen for a while.
