| 2007 Etienne Boileau Petit Chablis
The Petit Chablis appellation it the bottom rung for Chablis, but this is a tasty wine nonetheless. Hallmark lemon acidity and a mineral core with notes of wholemeal bread fill your mouth. It is more aggressive than the 06 Chablis, but you expect harder edges on these wines. There is a toasty element to the nose, which is intriguing and moreish, and that acidity affords the wine a nice length. Simple food will do this wine well, try something with some acid in it to soften the wine in your mouth, or grab yourself a dozen fresh oysters and a wedge of lemon and forget about your cares for a while. Expect to pay around $30 for this.
