I

NV Lustau 'San Emilio' Pedro Ximenez

If I could I'll start by giving you a little tip on how to sound 'in the know'. You call this wine PX, it is the shortened version of the name of the grape that makes it, Pedro Ximenez, I find if you try saying Pedro Ximenez you could cause yourself an unfortunate throat injury if you don't get the phlegm rolling around just right and don't forget the Spanish lisp at the end. Awkward pronunciation is perhaps the only drawback for this wine, this Sherry to be exact. It is the absolute epitome of luscious. It has a depth that makes you want to chase it down you throat with your tongue to try it for a little longer, and it leaves your mouth with an acidity you hardly notice given the abundance of sugar. The flavours range from dried fruits, sultana and figs to cinnamon and cloves. It has a nuttyness, perhaps coming from its maderised flavours, that lead into toffee and brown sugar. The feeling that this wine has in your mouth has the silk manufacturers in awe, this is a very pleasurable bottle of wine indeed. You can serve this wine at room temperature or chilled. Available in half bottles, for those who wish to pretend they will drink less and full bottles for the rest of us, it is $24 for the half and $45 for a whole, do yourself a favour and relax with your new friend PX.
